Our culinary director, Chef Alejandro Burgos, affectionately known as ‘Fofo’, is the mastermind behind our signature menu, serving as the creative force behind our signature, four-course menu.

Although not based permanently at the camp, Fofo plays a pivotal role, making periodic visits to oversee the menu’s execution, collaborate with our chefs, and ensure our offerings continue to enchant and surprise our guests. This unique structure allows us to maintain a standard of excellence and creativity that sets us apart, making every meal an unforgettable part of the safari experience.

His journey in the culinary world began in the bustling markets, kitchens, and boutiques of his homeland and has since taken him across the globe, enhancing his creativity and transforming cooking into an art form. His modesty, confidence and generosity are translated into his dishes, which are reflected in the explosive flavors of his dishes.


Taking Farm-to-Table one step further

In Ecuador, the concept of ‘farm to table’ is not a trend but a way of life, deeply embedded in the culture. This traditional approach to sourcing and eating food is evident even as modern habits begin to permeate some of the bigger urban areas.

At Galapagos Safari Camp, we’ve taken the ethos of farm-to-table dining and elevated it to what we term “Honest Dining”. While we raise our own cattle, support local farmers and cultivate our own organic produce, we┬árecognize that a delicate balance is required in the Galapagos. Here, agriculture must be carefully managed to preserve the islands’ fragile ecosystems. Using 100% local produce is not a blanket solution, given the environmental impact of agriculture on these precious lands and waters. Our approach to sustainability has always been guided by common sense.

Fofo has dived into the local markets of Ecuador, drawing inspiration from the rich tapestry of local and international flavors to craft his original small-plate menu. The daily ritual of our kitchen staff involves a pilgrimage to the Santa Cruz fish, spice, and vegetable markets, followed by forays into our gardens to pick fresh herbs, ensuring that every meal is a celebration of freshness and locality.
